Puran poli: 

     Puran poli is a traditional and most popular  maharashtrian sweet recipe and made during festivals like holi! Filling of Puran poli is made with skinned spilt Bengal gram( chaan dal) and jaggery/ sugar.

Ingredients:
Chana dal 1 cup
Jaggery 1 cup ( or 1/2 cup jaggery and 1/2 cup sugar)
2 cups wheat flour
Salt to taste
1/2 tea spoon cardamom powder
1/2 teaspoon nutmeg powder
Refined oil  1/2 cup
Water
Rice flour

Procedure: 
1) Wash 1 cup chana dal add  2 and 1/2 cup water. 

2)Take a pressure cooker add chana dal with water.  

3)pressure cook the  chana dal for 6/7 whistles. 

4) Keep the cooker aside til the pressure settles down. 

5) Take the wheat flour  and a pinch of salt in a large bowl. Add 1 tablespoon oil  and water little by little. 

6)Make smooth soft dough. Knead the dough until it becomes smooth. 

7) keep the dough in a bowl with adding 2 tablespoons oil for two hours.

8) Strain the excess water from dal, keep the stock aside to make 'katachi aamti( spicy dal).

9) Transfer the dal in a pan. Add 1cup jaggery,  a pinch of salt, cardamom powder, nutmeg powder. 

10) keep stirring till jaggery melts and mixture becomes thick.

11) Remove pan from the flame and grind  the mixture through puran maker or jali for fine stuffing.

12) Make a small size ball of the dough. Make  a double size ball of stuffing (puran).

13) Grease your finger tips and spread the dough like small round bowl. 

14) put stuffing ball in it and cover with dough.

15) Roll the roti by using dry rice flour.

16) Heat the tawa and place roti on it, roast both sides. 

17) Serve with ghee and coconut milk or regular milk.
